Quinoa & Mixed Greens Holiday Salad Recipe

Ingredients
2 cups Quinoa, cooked
1 cup Dried Cranberries
1 cup Hazelnuts, crushed
12 oz Feta Cheese, crumbled
1/2 bottle Brianna's Blush Wine Vinaigrette (or similar dressing, to taste)
Mixed Greens (between 5 - 16 oz, depending on how "Salad" you want the dish to be)
Salt and Pepper, to taste

 

Instructions
Mix together quinoa, cranberries, hazelnuts and mixed greens.  Salt and pepper to taste.  Add salad dressing (recommend 1/2 bottle, but dress to taste). 

Let the salad sit for 30 minutes for flavors to develop.

Salad can be served cold, room temperature, or warm. If served warm, quinoa may wilt greens slightly.

 

Why did we submit this recipe? This salad was created for the library's epic Christmas pot luck because we wanted a vegetarian, gluten free option for those who needed it.
