New Mexico Game Day Chili Recipe

Ingredients
6 strips of bacon
1 pound of lean ground beef
1/4 cup of finely diced onions
1 tablespoon of minced garlic
14 ounce container frozen Hot Bueno Red Chili puree
15 ounce canned pinto beans
3 bay leaves
1 teaspoon Mexican oregano
1 teaspoon cumin
1 teaspoon chicken bouillon
2 teaspoon salt, divided
1 cup water
Mexican blend shredded cheese
chopped green onions
sour cream
Fritos

 

Instructions
On medium heat, cook 6 strips of bacon until crisp. Leaving the bacon grease in the pan, set bacon aside and crumble when cool for Frito pie topping.

Sauté onions in bacon grease until caramelized.

Add ground beef to pan and brown, add 1 teaspoon of salt to meat.

After browned, put ground beef to the corner of pan and add minced garlic. Saute garlic until fragrant and then mix into ground meat.

Add thawed Bueno Red Chile Puree to pot and mix into the meat, ensure burner is on medium low heat.

Add the following spices into the pot:
  • 3 whole Bay Leaves (must be removed prior to serving)
  • 1 teaspoon of Cumin
  • 1 teaspoon of Oregano
  • 1 cup of water with 1 teaspoon of chicken bouillon mixed in
  • 1 teaspoon of salt

Mix in spices, place lid on pot and let simmer on low heat for 15 minutes.

Open can of beans, place in strainer, and thoroughly rinse with water to remove canned taste.

Add beans to pot and fold into meat/chile, cover pot and let simmer on low heat for 10 minutes.

Prepare Chile Toppings:
Chop green onions
Put cheese in dish
Get out sour cream
Crumble bacon pieces

Remove bay leaves from the chile.

Serve chile atop a bed of Fritos, sprinkle cheese, green onions, and crumbled bacon. Add a dollop of sour cream.
